While no one that I know of has used the ESP-12 (e,f,s?) I would be very surprised if my OnStepESPServer didn't run properly on it. My experience has been with the ESP-01 and the nice WeMos D1 Mini.

Yes, use the Alternate pin-map for the MiniPCB and MaxPCB.

Both beta and alpha OnStep's will work, the alpha is recommended at the moment.
